Baobab-Spiced Chicken & Quinoa Bowl
Ingredients:
Chicken:
- 2 free-range chicken breasts
- 2 Tbsp Organic Baobab Powder
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1 Tbsp olive oil
- Salt and pepper to taste
Quinoa:
- 1 cup quinoa
- 2 cups organic vegetable or chicken broth
- 1 Tbsp lemon juice
- 1 Tbsp chopped fresh parsley
Dressing:
- 1 Tbsp Organic Baobab Powder
- 1/4 cup Greek yogurt
- 1 Tbsp olive oil
- 1 Tbsp lemon or lime juice
- 1 tsp honey or agave
- Salt and pepper to taste
Garnish:
- Sliced avocado
- Cucumber, sliced
- Mixed salad greens
Method:
Start by preparing the chicken. In a small bowl, mix the Organic Baobab Powder, smoked paprika, ground cumin, garlic powder, salt, and pepper. Rub this spice blend over the chicken breasts, ensuring they are evenly coated. Heat the olive oil in a pan over medium heat and cook the chicken for 6-8 minutes on each side, or until fully cooked through and golden brown. Set the chicken aside to rest.
While the chicken is cooking, prepare the quinoa. Rinse the quinoa under cold water, then add it to a pot with the vegetable or chicken broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is cooked and the liquid is absorbed. Fluff the quinoa with a fork, then stir in the lemon juice and chopped parsley.
For the dressing, whisk together the Organic Baobab Powder, Greek yogurt, olive oil, lemon juice, honey, salt, and pepper until smooth and creamy.
To assemble the dish, slice the cooked chicken and serve it over a bed of quinoa. Add sliced avocado, cucumber and mixed salad greens on the side.
