Baobab Chocolate Truffles
These raw truffles are extremely easy to make and packed with healthy ingredients, so you don't have to feel guilty after eating them. They contain not only our powerful baobab, but also raw cacao powder, which is rich in polyphenols and proven to reduce inflammation and improve cholesterol levels.
Ingredients:
- 1 3/4 cups of soft medjool dates, pitted (soak in warm water if not soft)
- 2.5 tbsp raw cacao powder or cocoa powder (will need additional for coating)
- 1 Tbsp Organic Baobab Powder
Optional:
- 1/4 tsp espresso powder
- 1 tsp vanilla
- 1/8 tsp salt
- shredded coconut as a coating
Method:
Place all ingredients in a food processor or high powered blend and blend until you have a very smooth & even consistency. Use a spatula to scrape down the sides. Add a little melted coconut oil or even water that you soaked the dates in if the mixture is too dry.
Scoop out the mixture and roll into bite sized balls and then place them on a parchment paper lined baking sheet. Once you have finished rolling all of the balls, roll them into either more cacao powder or shredded coconut. Store in the refrigerator until ready to eat and enjoy!
