Baobab Energy Balls
Ingredients:
- 6-8 pitted medjool dates
- 1 cup oatmeal – you could also use instant (gluten-free if needed)
- ½ cup ground chia of flax seed
- 1/4 cup cacao nibs
- 2-3 tsp Organic Baobab powder
- 1 tsp vanilla extract
- ⅓ cup shredded coconut
- ½ cup cashew butter or sunflower seed butter (or any nut butter of choice)
Soak medjool dates in hot water for about 10 minutes.
Remove dates from the water (save the water) and place in your food processor. Pulse contents until smooth, scraping down sides and adding a little bit of the reserved water as necessary until it reaches a paste consistency.
In a large bowl, combine the oatmeal, coconut, baobab powder, ground chia/flax seed and cacao nibs. Next add date paste, vanilla & nut butter to the large bowl.
Stir to combine all of the ingredients – we find this works best with your hands! Then refrigerate dough for 20-30 minutes and then form into balls. Store in the refrigerator in a sealed container.
