Baked Muesli and Baobab Bars

These golden, chewy muesli bars are packed with oats, nuts, and dried fruit for lasting energy. A touch of baobab powder adds a tangy brightness and a natural surge of vitamin C, making them the perfect nourishing snack for busy days.
Ingredients:
- 250g rolled oats
- 100g mixed nuts (almonds, cashews, walnuts), roughly chopped
- 75g sunflower or pumpkin seeds
- 75g dried fruit (sultanas, apricots, cranberries, or a mix)
- 2 Tbsp shredded coconut
- 1.5 Tbsp Organic Baobab Powder
- 120g honey or maple syrup
- 60g coconut oil or butter
- 1 tsp vanilla extract
- ½ tsp ground cinnamon
- Pinch of salt
Method:
Preheat the oven to 170°C (fan-forced) and line a square baking tin with baking paper.
Spread the oats, nuts, and seeds on a tray and toast in the oven for 8–10 minutes, until lightly golden.
In a small saucepan, gently heat the honey (or maple syrup), coconut oil, vanilla extract, cinnamon, and salt until melted and combined. Remove from the heat and whisk in the Organic Baobab Powder.
In a large mixing bowl, combine the toasted oat mixture, dried fruit, and shredded coconut. Pour over the warm honey mixture and stir well to coat.
Press the mixture firmly into the prepared baking tin, smoothing the top with the back of a spoon. Bake for 20–25 minutes, until golden brown.
Allow to cool completely before cutting into bars. Store in an airtight container for up to one week and enjoy!
