Baobab Calcium Bars

These creamy bars are built specifically for bone strength. Our baobab floods the recipe with plant-based calcium, while the almond butter, tahini, oats and chia layer in even more mineral-rich goodness. They are a soft, chewy and vegan snack, packed with nutrients designed to strengthen your bone and joint health and keep you energised- yum!

Ingredients:

  • 250g rolled oats
  • 120g almond butter
  • 80g tahini
  • 2 Tbsp chia seeds
  • 2 Tbsp hulled sesame seeds
  • 2 Tbsp shredded coconut
  • 2 Tbsp Organic Baobab Powder
  • 60ml maple syrup
  • 40g coconut oil
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • Pinch of salt
  • Optional: 40g chopped dried figs or apricots for extra natural calcium

Method:

Preheat the oven to 170°C (fan-forced) and line a square baking tin with baking paper.

Spread the oats, chia and sesame seeds onto a tray and toast for 8–10 minutes, until lightly golden and fragrant.

In a small saucepan over low heat, gently warm the almond butter, tahini, coconut oil, maple syrup, vanilla, cinnamon and salt until smooth and combined. Remove from the heat and whisk in the Organic Baobab Powder.

In a large mixing bowl, combine the toasted oat mixture, shredded coconut and dried fruit if using. Pour over the warm nut-and-tahini mixture and stir until everything is evenly coated.

Press the mixture firmly into the prepared tin, smoothing the top with the back of a spoon. Bake for 18–22 minutes, or until just golden around the edges.

Allow to cool completely before slicing into bars. Store in an airtight container for up to one week and enjoy!
