Baobab-Spiced Sweet Potato & Chickpea Stew

Ingredients:
- 1 Tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 Tbsp grated ginger
- 1 large sweet potato, peeled and diced
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth
- 2 tablespoons Organic Baobab Powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/2 tsp ground turmeric
- Salt and pepper to taste
- Fresh coriander, chopped (for garnish)
- Cooked quinoa or rice (optional, for serving)
Method:
Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the garlic and ginger, cooking for another 2 minutes until fragrant. Add the diced sweet potato and chickpeas, stirring to combine.
Pour in the diced tomatoes and vegetable broth, then stir in the baobab powder, cumin, coriander, cinnamon, turmeric, salt, and pepper. Bring the stew to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the sweet potatoes are tender and the flavours are well combined.
