Baobab Yoghurt Parfaits

A light, refreshing dessert layered with tangy baobab yoghurt, sweet berries, and crunchy granola. It’s simple to make, looks impressive, and delivers a punch of antioxidants and vitamin C.
Ingredients:
- 250g Greek yoghurt (or coconut yoghurt for dairy-free)
- 2 Tbsp Organic Baobab Powder
- 2 Tbsp honey or maple syrup
- 1 tsp vanilla extract
- 150g mixed berries (blueberries, raspberries, strawberries and/or blackberries)
- 60g muesli of choice
- Zest of 1 lemon
Method:
To make the parfaits, start by mixing the Greek yoghurt with Organic Baobab Powder, honey, and vanilla until you have a smooth and creamy blend. Spoon a layer of this baobab yoghurt into the base of your serving glasses, then add a layer of granola followed by fresh berries. Continue layering the yoghurt, granola, and berries until the glasses are full. Finish with a generous dollop of baobab yoghurt on top, sprinkle over some lemon zest, and add a few extra berries for colour. Place the parfaits in the fridge to chill for about 15 minutes, or enjoy straight away for a refreshing balance of creamy, crunchy, and fruity goodness.
